assalaamu alaikum. we apologize for the late response.

1. we had posted some information on whey, you can find it here:
http://www.ifanca.org/newsletter/2000_09.htm#01
http://www.ifanca.org/newsletter/2001_01.htm
the basic thing with whey is it is produced from milk during the manufacture of cheese. an enzyme is required to produce cheese and the enzyme is derived from either animal or microbial sources. if the enzyme used to produce the cheese and whey is Halal, the whey would be Halal. otherwise it would nto be. if you don't know the source of the enzyme, you should consider the whey to be questionable unless the product containing it is Halal certified. to determine if it is Halal or not, you need ot ask the manufacturer of the product containing it. microbial enzymes are Halal. animal enzymes are Halal if they come from Halal animals processed according to Islamic Law. the animals used are cows and pigs. pig derived enzymes are haram and so is the whey produced using it. cow enzymes are Halal if the animal is processed (slaughtered) according to Islamic Law. we consider that to be slaughtered by a Muslim reciting Tasmiyyah. that is not normally the case in the West.

2. chicken broth is normally a flavoring derived from chickens. if they were processed according to Islamic Law, they would be Halal. we would nto certify products containing chicken broth from chickens not processed according to Islamic Law. it is best if the chickens are hand slaughtered by a Muslim reciting Tasmiyyah. most chicken production in the West is machine slaughtered. we don't normally certify such production in the US. however, it may be acceptable if a Muslim is present reciting Tasmiyyah on the chickens and hand slaughtering any chickens missed by the mechanical knife. again, this is not the normal case in the West. we would avoid such products unless the manufacturer tells you the chickens are Halal certified or the broth has artificial chicken flavor with no ingredients derived form chickens.

3. regarding fish fillets and french fries at McDonald's or other restaurants, fish itself is Halal. the preparation may render it haram if it is contaminated with haram products. the frying oil may be used for other items which are not Halal. also, the buns, condiments and added ingredients may contain haram ingredients. you need to check about that. as to the fries, they may be acceptable but we are not certifying them and are nto sure or this. you can ask them if there is any animal derived ingredient in the fries or the oil they are fried in at the restaurant or the potato plant.

we hope this answers your questions.
